Not so recently I was invited out by the team at Collingwood Whiskey to try out their latest offering The Town Collection, Collingwood Double Barreled Canadian Whisky.
Made in the Town of Collingwood, Ontario, (a place that I frequented as a kid with my family), and using Georgian Bay water, this truly Canadian spirit is matured in hand-made American white oak barrels.
Using an intricate maturation process, the Collingwood Double Barreled Whisky is first rested in once-used American white oak barrels, and then re-barreled in new, heavily toasted and lightly charred white oak barrels, where it then rests to achieve perfected maturity.
This beautifully crafted whisky, that I found to be rather smooth, simply sweet and really quite perfect imparts notes of dry cinnamon spice, toasted oak and lightly dried orchard fruits.
To be quite honest it rather reminded me of eating mum’s Christmas cake over the holidays, which made me enjoy it all the more.
The Town Collection Double Barreled delivers an elevated drinking experience due to its exquisitely aromatic flavour profile that maintains both a smooth and complex presence.
The balance, the aroma, the taste all worked in perfect unison to offer a really stand-up whiskey from Collingwood for those that enjoy something a little sweeter.
