What would the holidays be without chocolate? I don’t know, and, I don’t want to find out. Thankfully, I don’t have to. Now when I talk about chocolate, I’m not talking about your every day, standard chocolate Santa. No no no; I’m talking about quality, natural chocolate, like the delicious delights made by Green & Black’s.

With great chocolate, you can make just about anything, like Strawberry and White Chocolate Cheesecake, Chocolate Fudge Cake and my favourite, Ultimate Chocolate Brownies.
An Ultimate Chocolate Recipes book would not be complete without an Ultimate Chocolate Brownie recipe. I searched high and low and tested many recipes but have always come back to the version Green and Blacks have in their first book (I’ve taken the cherries out of this one; just a personal preference). Incredibly easy to make, decadently chocolatey, not too sweet, a light crust outside and beautifully moist within, but with enough salt to cut through the richness these brownies will go down a treat this festive season.
ULTIMATE CHOCOLATE BROWNIES
10½oz unsalted butter
10½oz dark (70% cocoa solids) chocolate, broken into pieces
5 extra-large free-range eggs
2¼ cups granulated sugar
1 tablespoon vanilla extract
12/3 cups all-purpose flour
1 teaspoon salt
Preheat the oven to 350ºF. Line a 13 x 10in baking pan at lease 2¼ in deep with parchment paper.
Melt the butter and chocolate together in a heatproof bowl over a saucepan of barely simmering water, making sure the bowl doesn’t touch the water. Beat the eggs, sugar, and vanilla extract together in a bowl until the mixture is thick and creamy and coats the back of a spoon. Once the butter and the chocolate have melted, remove from the heat and beat in the egg mixture. Sift the flour and salt together, then add them to the mixture and continue to beat until smooth.
Pour into the baking pan, ensuring the mixture is evenly distributed. Bake in the oven for 20 to 25 minutes or until the whole top has formed a light brown crust that has started to crack. This giant brownie should not wobble but should remain gooey on the inside.
Leave it to cool for about 20 minutes before cutting into large squares while still in the pan. The parchment paper should peel off easily.

If you’re preparing a chocolate dessert charcuterie board during the holidays or looking to bake some amazing treats for friends and family, entertaining is always made better with that little homemade touch, and it doesn’t have to be difficult. Just setting out a platter of great quality chocolate peppered with a few choice festive treats will do the trick. Be inventive, the sky really is the limit.
